Sparkling Wine Methods
Sparkling-wine methods are defined by where carbon dioxide is created and how the wine is handled after fermentation. All current Champagne Fairy sparkling wines use the traditional method.
How sparkling wine gets its bubbles
Sparkling-wine methods differ mainly in where the bubbles are created, how the wine is separated from its sediment, and how much contact it has with yeast lees. All sparkling wines currently offered by Champagne Fairy use the traditional method, also called methode champenoise in its historical usage.
Methods at a glance
| Method | Where bubbles form | Lees and finishing | Regions and styles |
|---|---|---|---|
| Traditional method (methode champenoise) | In each bottle | Bottle lees ageing, riddling and disgorgement | Champagne; quality Sekt; Cava; Franciacorta; Trentodoc; traditional-method wines worldwide |
| Tank method (Charmat or Martinotti) | In a pressurized tank | Bulk filtration and pressurized bottling | Prosecco and many fresh, aromatic sparkling wines |
| Ancestral method (pet-nat) | One fermentation finishes in bottle | May remain cloudy or be disgorged | Limoux, Gaillac, Bugey-Cerdon and modern pet-nat worldwide |
| Transfer method | In bottle | Bottles emptied into tank, filtered and rebottled | Used internationally, often for production efficiency or special bottle sizes |
| Continuous method | Across connected pressurized tanks | Continuous production and pressure filtration | Historically associated with Soviet sparkling-wine production |
| Direct carbonation | Carbon dioxide is injected | No secondary fermentation required | Simple sparkling products in many markets |
The methods in detail
Traditional method (methode champenoise)
A still base wine is bottled with tirage liqueur so a second fermentation creates carbon dioxide inside the sealed bottle. The wine then rests on its lees. Riddling moves sediment to the neck, disgorgement removes it, and dosage may be added before final closure.

Tank method (Charmat or Martinotti)
The second fermentation takes place in a sealed pressure tank. The wine is filtered and bottled while pressure is maintained, generally preserving primary fruit and floral aromas.

Ancestral method (pet-nat)
Partly fermented wine is bottled before its first fermentation is complete. Fermentation continues in bottle and traps carbon dioxide; practices vary on filtration, disgorgement and sweetness.
- Where bubbles form
- One fermentation finishes in bottle
- Lees and finishing
- May remain cloudy or be disgorged
- Regions and styles
- Limoux, Gaillac, Bugey-Cerdon and modern pet-nat worldwide
Transfer method
Secondary fermentation happens in bottle as in the traditional method, but the finished bottles are emptied under pressure into a tank. The wine is filtered and rebottled, avoiding individual riddling and disgorgement.

- Lees and finishing
- Bottles emptied into tank, filtered and rebottled

Continuous method
Wine moves through a sequence of pressurized tanks while yeast and sugar support continuous secondary fermentation. It is designed for consistent, high-volume production.
- Where bubbles form
- Across connected pressurized tanks
- Lees and finishing
- Continuous production and pressure filtration
- Regions and styles
- Historically associated with Soviet sparkling-wine production
Direct carbonation
Carbon dioxide is added to still wine under pressure, much like carbonating another beverage. It creates bubbles without a bubble-forming fermentation and usually contributes no lees-derived character.
- Where bubbles form
- Carbon dioxide is injected
- Lees and finishing
- No secondary fermentation required
- Regions and styles
- Simple sparkling products in many markets
