Sparkling-wine methods are defined by where carbon dioxide is created and how the wine is handled after fermentation. All current Champagne Fairy sparkling wines use the traditional method.
How sparkling wine gets its bubbles
Sparkling-wine methods differ mainly in where the bubbles are created, how the wine is separated from its sediment, and how much contact it has with yeast lees. All sparkling wines currently offered by Champagne Fairy use the traditional method, also called methode champenoise in its historical usage.

The methods in detail
Traditional method (methode champenoise)
A still base wine is bottled with tirage liqueur so a second fermentation creates carbon dioxide inside the sealed bottle. The wine then rests on its lees. Riddling moves sediment to the neck, disgorgement removes it, and dosage may be added before final closure.

Tank method (Charmat or Martinotti)
The second fermentation takes place in a sealed pressure tank. The wine is filtered and bottled while pressure is maintained, generally preserving primary fruit and floral aromas.

Ancestral method (pet-nat)
Partly fermented wine is bottled before its first fermentation is complete. Fermentation continues in bottle and traps carbon dioxide; practices vary on filtration, disgorgement and sweetness.

Transfer method
Secondary fermentation happens in bottle as in the traditional method, but the finished bottles are emptied under pressure into a tank. The wine is filtered and rebottled, avoiding individual riddling and disgorgement.

Continuous method
Wine moves through a sequence of pressurized tanks while yeast and sugar support continuous secondary fermentation. It is designed for consistent, high-volume production.

Direct carbonation
Carbon dioxide is added to still wine under pressure, much like carbonating another beverage. It creates bubbles without a bubble-forming fermentation and usually contributes no lees-derived character.

Since 1984, we have been producing our Riesling sparkling wine in the cellar of the historic Joh. Förster winery in Trier-Süd. Below this Art Nouveau building, there is an extensive multi-story cellar. Those rooms are ideal for maturing sparkling wine using the Champagne method. Second fermentation in bottle and riddling by hand. The sparkling wines from Lauer mature at 8 to 10 degrees Celsius in dark-vaulted rooms for about 12 to 20 months before they are disgorged.
