Riesling Sweetness and Acidity Scale

Riesling can contain measurable residual sugar yet taste dry because acidity changes the perception of sweetness. The Terry Thiese scale describes that balance.

Riesling sweetness and acidity

The Terry Thiese scale describes perceived balance, not residual sugar alone. High acidity can make a wine with measurable sugar taste dry.

ValueMeaning
-2Bone dry; acidity is about three to four times the sugar.
-1Very dry; acidity is about twice the sugar.
0Balanced dry; sweetness and acidity feel equal.
+1Slightly sweet or fruity.

  3. 2024 Rotschiefer

    Dr Hermann - 2024 - Germany - Dry - 750ml - 115 ILS - In stock

Due to frost, the 2024 Riesling Trocken Rotschiefer is not from Kinheim but predominantly from the upper part of the Erdener Treppchen as well as from vineyards in Orzig. Vinified exclusively in stainless steel tanks, the wine shows a precise, refined and spicy bouquet of red slate, herbs and delicate but ripe and lush tropical fruit aromas. The wine is round, intense and expressive on the palate, yet it is also light, finessed and enormously saline and long. This is one of the many best buys from Christian Hermann. It is mouth-filling, highly stimulating and so characterful, as if it were a grand cru. 8,500 bottles made. 11.5% stated alcohol. Screw cap. Tasted at the domaine in January 2026. - Stephan Reinhardt (Feb 19, 2026)

Since 1984, we have been producing our Riesling sparkling wine in the cellar of the historic Joh. Förster winery in Trier-Süd. Below this Art Nouveau building, there is an extensive multi-story cellar. Those rooms are ideal for maturing sparkling wine using the Champagne method. Second fermentation in bottle and riddling by hand. The sparkling wines from Lauer mature at 8 to 10 degrees Celsius in dark-vaulted rooms for about 12 to 20 months before they are disgorged.
