Santorini is one of the world's rarest and most demanding vineyard landscapes: a small, dry volcanic island where vines grow in low kouloura baskets, protecting fruit from wind, heat and volcanic dust. Sandy ash, pumice and very low organic matter kept phylloxera away, leaving many vines ungrafted on their own roots; some root systems are thought to approach 300 years in age.
Assyrtiko is the island's defining grape, retaining vivid acidity even in heat and translating the landscape into lemon peel, citrus, stone fruit, salt, smoke and stony minerality. Santorini has around 1,300 hectares of vineyard and roughly 40 indigenous varieties, though Assyrtiko accounts for about 80% of production.
Scarcity is intrinsic to the wines. Historical annual rainfall is about 326 mm; 2025 brought roughly 165 mm, around half that level, after successive low-yield years. The common rainfall-only threshold for a desert is below 250 mm annually (formal climate classifications also consider evaporation and seasonality). The 2025 island harvest was about 450 tonnes; using the practical conversion of 1 kg of grapes to roughly one 750 ml bottle, that equates to only about 450,000 bottles. For comparison, drought-hit 2024 yielded about 700-800 tonnes, or roughly 700,000-800,000 bottles on the same basis.
