Wind-shaped basket vines and volcanic soils give Assyrtiko its salty, citrus-charged intensity.
Santorini is one of the most extreme vineyard landscapes in the Mediterranean. Vines grow close to the ground in kouloura baskets, a traditional training method that protects grapes from wind, sun, and volcanic dust.
Assyrtiko is the island's defining grape. It keeps high acidity even in heat and turns the island's pumice, ash, and scarce water into wines that feel salty, citrus-driven, and intensely mineral. Aidani and Athiri can soften or perfume blends.
The wines are built for seafood, lemon, olive oil, and smoke. Dry Santorini can be sharp and electric when young, then gain wax, herbs, honey, and deeper volcanic texture with time.
