Thalassitis is Gaia’s dry Assyrtiko from Santorini, shaped by the island’s volcanic soils, intense sun and maritime climate. It delivers a focused profile of lemon, citrus peel and restrained stone fruit, with a smoky, saline undertone. The palate is dry, firm and driven by Assyrtiko’s naturally high acidity. Its mineral character and freshness make it a natural partner for oysters, grilled fish, shellfish and lemon-dressed Mediterranean dishes.
