I Vigneri is Salvo Foti’s living homage to the ancient Etnean guild of vineyard workers, the maestranza dei vigneri. Vineyards are cultivated ‘alberello’ bush-vine with local chestnut stakes and hand work from pruning to harvest. In Milo’s Contrada Caselle, Foti restored the 1840 Palmento Caselle—a traditional gravity -flow winery still in use—and farms Carricante on ash-sandy terraces. His VIGNAdiMILO Etna Bianco Superiore comes from massale-selected Carricante, including parcels planted with the historic Etnean method of magliòli (direct-rooted, ungrafted cuttings). Geology & altitude: east-slope terraces of ash, pumice and lapilli at 700–820 m lend pungent salinity and a fine, chalk-like grip. Style: laser-lined citrus (lemon, finger lime), wild fennel and anise, with a smoky-flinty edge and long, vertical acidity.
