Luís Lopes is the Portuguese winemaker behind Moreish, a personal project he began in 2013. After studying oenology in Portugal, he gained experience in Burgundy, New Zealand and Germany before returning home in 2006. The name Moreish expresses the aim clearly: wines whose freshness, transparency and ease at the table invite another glass. Lopes works in small quantities with purchased grapes and collaborates closely with growers rather than relying on a single estate. Since 2019, part of the project has focused on vineyards near Coimbra in Bairrada, including Bical and Fernão Pires grown on limestone soils. His approach is low-intervention but attentive, seeking precise, characterful wines with a light touch rather than a fixed recipe.

Moreish Roupeiro comes from a historic Beira Interior vineyard planted around 1930. The vineyard’s old Roupeiro vines and granite-influenced environment give Luís Lopes the material for a layered, textural white that retains notable freshness despite the variety’s naturally generous fruit. The 2024 was fermented spontaneously and matured for approximately ten months on its lees, mainly in used French oak with a smaller portion in stainless steel. It offers pear and citrus fruit, grainy mineral texture and a stony, savoury finish. Pair it with grilled fish, salt cod, roast chicken, mushrooms or richly seasoned vegetable dishes.

B.Cal is Luís “Faísca” Lopes’s interpretation of Bical grown on the limestone slopes of Bairrada. The 2024 comes from approximately 16-year-old vines and was fermented with indigenous yeasts, partly in stainless steel and predominantly in used Austrian oak, followed by ten months on fine lees and full malolactic fermentation. Initially restrained and reductive, the wine gradually reveals white fruit, lime peel, dried flowers and crushed-stone minerality. Its palate is deep and creamy without losing its firm acidity, dry profile and pronounced saline tension. This is a serious, age-worthy white intended for the table, especially with baked fish, shellfish, roast poultry and substantial vegetable dishes.

Moreish Cercial—spelled “Cerceal” on the producer’s commercial listing—is a focused Bairrada white made by Luís Lopes. Fermentation and maturation are divided between barrel and stainless steel, an approach intended to add texture without obscuring the grape’s natural acidity or the limestone character of its origin. The result is linear, vivid and dry, with restrained citrus and orchard fruit, a lightly textured mid-palate and a persistent saline finish. Its freshness and understated fruit make it especially versatile with oysters, clams, grilled white fish, ceviche and delicately seasoned poultry.
