Maria Gomes is the Bairrada name for Fernão Pires, one of Portugal’s most aromatic native white grapes. Luís Pato uses fruit from Bairrada and vinifies it directly off the skins in stainless steel, preserving the variety’s fragrance and producing an accessible expression without overt oak influence. The wine is bright and aromatic, with white flowers, citrus, ripe pear and subtle tropical-fruit notes. Its fresh acidity and clean, dry finish balance the variety’s naturally generous perfume. Vinha Pan is one of Luís Pato’s important single vineyards, associated with clay-limestone soils and the Baga grape. The sparkling expression applies Pato’s experience with hyperoxygenation and lees ageing to produce a serious, gastronomic espumante with comparatively little reliance on added sulphur. The wine combines Baga’s firm acidity with red apple, wild strawberry, citrus peel and savoury mineral notes. Extended bottle ageing should contribute a fine mousse, creamy texture and touches of brioche, while the finish remains dry and incisive. It is particularly suited to roast poultry, charcuterie, hard cheeses and substantial fish dishes.
