Herdade do Cebolal lies near Portugal’s Atlantic coast at the southern end of the Setúbal Peninsula. Its white wine is produced with minimal intervention from varieties including Arinto and Antão Vaz, with spontaneous fermentation and extended contact with fine lees rather than conspicuous oak ageing. The wine is fresh, mineral and firmly acidic, with citrus, herbs, white flowers and restrained orchard fruit. Lees ageing contributes texture while preserving the coastal freshness and dry, gastronomic finish. It is an excellent companion for grilled fish, shellfish, rice dishes, fresh cheeses and Mediterranean vegetables.
