German Rieslings and Tokaj wines can feel dry even when they contain measurable sugar, because high acidity balances sweetness.
Terry Thiese scale
The Terry Thiese scale describes the balance between perceived sweetness and acidity.

| -2 | Bone dry, acidity is about 3-4 times sugar |
| -1 | Very dry, acidity is about 2 times sugar |
| 0 | Balanced dry, sugar and acidity feel equal |
| +1 | Slightly sweet / fruity, sugar is about 2 times acidity |
| +2 | Sweetish, sugar clearly exceeds acidity |
| +3 | Sweet, sugar much exceeds acidity |
| +4 | Late Harvest dessert, above 95 gram sugar per liter |
Champagne dosage
Champagne and sparkling sweetness is usually described by dosage, the sugar added after disgorgement, plus any residual sugar already in the wine.
